Chicken Saltimbocca

Ingredients
3 large chicken breasts, boneless, skinless6 thin slices of boiled or baked ham6 tablespoons of 2% mozzarella cheese, shredded1 14.5 oz can of petite diced tomatoes (drained)1 teaspoon of oregano1/3 cup of bread crumbs
Directions
Preheat oven to 350 degrees.
Trim chicken and half lengthwise.
Place chicken, boned side up, on wax paper or a cutting board. Place clear plastic wrap or wax paper over it. Working from the center out, pound lightly with meat mallet until about 5"x5". Remove wrap.
Place chicken on a cookie sheet, greased with non-stick spray.
Place ham slice on chicken, then1 tablespoon mozzarella cheese on each cutlet.
Top with some tomato and a dash of oregano.
Sprinkle with bread crumbs.
Bake 40-45 minutes.
