One 6 oz. package Farmhouse® Spanish Rice1 cup onion, chopped3/4 cup green bell pepper, chopped 2 cloves garlic, minced2 Tablespoons olive oil1 lb. sliced, boneless, skinless chicken1-1/2 cups waterOne 14.5 oz. can diced tomatoes, undrained2 teaspoons Italian seasoning1/3 cup sliced pimento olives
1.In a large skillet, sauté onion, bell pepper and garlic in olive oil until tender.
2.Add chicken and cook until no longer pink.
3.Add water, tomatoes, rice, contents of seasoning packet and Italian seasoning; bring to a boil.
4.Reduce heat, cover and simmer 15 minutes.
5.Add olives and cook 5-10 minutes longer or until moisture is absorbed.
Serving Size: Makes about six 1 & 1/2 cup servings
