Vegan Peanut Brown Rice Bowl

Ingredients
1/4 cup onion, chopped1/4 cup carrots, sliced thin (or shredded carrots)6 oz (1 package) portabella mushroom caps, cubed2 cups fresh spinach1 clove garlic, grated1 tbsp fresh ginger, grated2 tbsp peanut satay sauce1-2 tsp lime juice1 tbsp vegan sour cream2 tbsp hot waterhot sauce (optional)1/4 tsp ground tumeric
Directions
Cook onion and carrot on low heat with s spray of fat-free cooking oil until soft. Add mushrooms. When mushrooms are soft, add spinach, ginger, and garlic.
Mix together satay sauce and hot water. Add lime juice, sour cream, tumeric, and hot sauce.
Add sauce and brown rice to veggies. Cook until hot. Serve and enjoy!
