Spicy Vegetable Lentil Soup

Ingredients
Onions, raw, 2 large (remove)Ginger Root, 6 tsp (remove)Celery, raw, 4 stalk, medium (7-1/2" - 8" long) (remove)Carrots, raw, 8 medium (remove)Apples, fresh, 2 medium (2-3/4" dia) (approx 3 per l (remove)Garlic, 2 cloves (remove)Curry powder, 2 tbsp (remove)Chicken Broth, 8 cup (8 fl oz) (remove)Lentils, 1 cup (remove)Plain low fat yogurt
Directions
This recepie makes 12 servings. You will need a crock pot!

1) Dice the carrots, celery, onions, and apples.
2) Mince the galice cloves
3) Peel and grate the ginger root
4) rince lentils
5) Put everything above in the crockpot. Add chicken broth and spices. You can use ground cumin instead of cumin seeds.
6) Cook in crockpot on low for 8-10 hours or High for 4-6 hours, until thick and bubbling.
7) Transer mixture to blender or food processor. In batches, puree until smooth. Return to slow cooker to keep warm. Ladle soup into individual bowls and top each with a dollop of yogurt.
