Killer Salmon Cakes

1 Large Carrot (Shredded)1 Small Zucchini (Shredded)1-2 Celery Stalk(s) (Finely Chopped)1/2 Onion (Finely Chopped)1 Large Can of Salmon2 Large Eggs2 Tbsp of Your Favorite Mayo1 Tbsp of Dijon Mustard1 Tbsp of Horseradish Sauce(Or swap the last two for Horseradish Mustard)1 C Bread Crumbs (or until you reach desired texture)
Saute veggies over low heat in small amount of olive oil until tender. Remove from heat.
Add eggs to large mixing bowl and beat slightly. Then add all other ingredients (except breadcrumbs) and mix thoroughly. Add bread crumbs until you reach a most but mold-able consistency. Form into patties.
Heat large non-stick pan (medium heat) with a small amount of olive oil. Fry patties until brown on the outside, but still soft on the inside (3-5 minutes per side).
Plate up and enjoy!
