Better Moussaka

Ingredients
2 small eggplants3/4 t salt1 pkg veggie ground round1 onion, chopped1/2 t cinnamon1 1/2 c spaghetti sauce1 c red wine3 T grated Parmesan cheese2 eggs1 T butter1 T flour1 C skim milk1/3 C feta cheesesalt pepperdash of nutmeg
Directions
Peel eggplants and cut lengthwise into thick slices. Sprinkle with salt and set aside for at least 15 minutes on paper towels to drain.
