Sweet, Gingered Spinach with Pear

Ingredients
Dole Baby Spinach Salad, 3 ozPear, ripe, sliced thin, 1 pear, small Dry Roasted Cashew Nuts, 5 crushed cashewsFresh Ginger Root, peeled, 2 tspTamari Sauce, 1 tbspExtra Virgin Olive Oil, 1 tbsp
Directions
Saute ginger and pears in extra virgin olive oil. The spinach should wilt, though not completely shrink. Add crushed cashew nuts and tamari sauce. Toss and quickly serve.

If you don't have tamari sauce, you can use soy sauce, though you will lose some of the sweet flavoring. (Soy sauce does have wheat glutens in it.)

This will be a pleasantly sweet main dish for 1 or a side dish for 2. Serve over rice, or eat as it is.
