Tuna Casserole, GF, SF, Low Carb, Dairy Free

Ingredients
2, 5oz cans tuna packed in water, drained and rinsed1/2 tbsp butter1 cup cubed eggplant1 tbsp chives or green onions, minced1/2 cup diced celery1/2 cup chopped mushrooms1 tbsp dijon (or other deli style) mustard1 clove garlic1/4 tsp onion powderpepper to taste1 1/2 tbsp nutritional yeast1/3 cup water or non-dairy milk1 1/2 tbsp mayo (homemade or healthy kind!)
Directions
Melt butter in nonstick skillet. Cook eggplant, green onions, celery, and mushrooms in butter until browned and soft. Add in tuna, mustard, garlic, and spices, and stir together. Add in nutritional yeast and water, stir well, and bring to boil. Reduce heat, then add in mayo and stir to mix.

Serve! If you want some crunch, top with sprouted mung beans instead of potato chips :)
