Kabocha and Kimchi Pancakes

Ingredients
1 half kabocha squash (roughly 2 cups)Kimchi (100 grams, or to taste)Soy sauceSriracha2 eggsPepper to tasteBean sprouts (half a cup or a handful)Coconut flour
Directions
1. Soften kabocha in microwave or oven.
2. Remove seeds and stringy stuff. Remove flesh and mash.
3. Add kimchi, bean sprouts, Sriracha, soy sauce, pepper, and bean sprouts.
4. Beat and add eggs.
5. Form mixture into disc shapes, dredge in coconut flour.
6. Fry in olive oil. Finishing one pancake should take less than a minute, depending on the heat of your stovetop.
