Rebelliousrose's Sausage and Tomato Pasta and Sauce

Ingredients
2 cans Hunt's Diced Fire Roasted Tomatoes1 roll Tennessee Pride sausage, Hot, Mild or SageTsp sage, fresh or driedTsp basil or ten basil leavesTabasco Chipotle Pepper Sauce (Smoked)2 cups frozen spinach1 oz red wine2 tblsp capers, drainedGround pepper to taste1 package of pasta (suggested penne or rotini); whole wheat or spinach
Directions
Cut sausage into small chunks and saute over high heat in a large pot until nicely browned. Pour two cans of tomatoes and juice over cooked sausage, bring to hard simmer.

Add capers, spices, red wine, Tabasco and simmer for 30-60 minutes.

10 minutes before serving, add frozen spinach, simmer for remaining time. Adjust seasonings if required.

Prepare pasta according to manufacturer's directions. Drain well. Stir into sauce, allow to heat to temperature. Serve in bowls.
