Spicy Shrimp and Grits

1Cup quick-cooking grits2 tablespoons olive oil1/2 of a yellow onion diced4 thin slices proscuiutto cut into thin strips6 garlic cloves, minced1 cup canned diced tomatos WITH juice2 tablespoons dried oregano1 lb large shrimp (peel, devained and remove tail)2 cups loosely packed arugulaCayenne pepper (optional)
1. Bring 4 1/2 salted water to boil. Wisk in the grits, reduce heat to medium heat. Cook for 15 minutes.
2. Meanwhile, heat a skillet over medium heat. Add the olive oil, onion, prociutto and garlice. Cook stirring occasionally until onion is golden brown. Add tomatoes, oregano and shrimp. Cook until shrimp are opaque (about 4 minutes) Add the arugula cook 1 minute.
3. Place grits on plate top with shrimp mixture. sprinkle with cayenne pepper in using.
