Homemade Granola Bars

2 C. rolled Oats1/2 C. brown sugar (packed)1/4 C. wheat germ1/4 C. ground flax1 tsp. cinnamon1 C. whole wheat flour1/4 C. raisins1/4 C. dried Cranberries1/4 C. mini chocolate chips3/4 tsp. sea salt1/2 C. honey (or maple syrup for a slightly different flavour)1 egg, beaten1/2 C. olive oil2 tsp. vanilla extract
Preheat oven to 350F
Grease a 9 x 13 inch baking pan
In a large bowl, mix first 10 ingredients
Make a well in the centre and poru in the honey or syrup), egg, oil and vanilla. Mix well.
Pat the mixture evenly into the pan.
Bake for 30 minutes, but keep your eye on the oven - you don't want them to be too dry. They're good when they're a little bit chewy.
Cool for 5 minutes, then cut into bars or squares.
NOTE** Be careful not to let teh bars cool completely as that will make them difficult to cut.
