Cowboy Chicken

Ingredients

6 - Chicken Breast halves, no skin,1 jar (about 2 cups) your favorite Salsa (mild, medium, or hot)1-2 TBLSP Brown Sugar 1 TBLSP Brown Mustard or Dijon Mustard
Place chicken in crock pot or casserole dish.
Mix all other ingredients in bowl and pour over chicken.
Cook in crock pot on low for about 6 hours, or bake in 375f oven for about 1 hour.
The sauce is delicious over rice, scooped up with baked tortilla chips, or even served over steamed veggies.

this sounds good! even though i dont like to use my crockpot as much bc it is a pain to clean. but i should def. try it i think i have a jar left of my moms homeaide salasa. ill have to try it over rice. and i think i do have a thing of beans. - 8/15/08

Hi STEELER! Just wanted to say, if you don't want to use the crockpot, this is DEFINITELY delicious baked in the oven. I use the crockpot sometimes for 'convenience' and to have it ready earlier since I work ... but honestly, tossing it in the oven for an hour or so is just as easy & yummier.

My kids were VERY happy with this meal, and I enjoyed it too! I chose the oven receipe. I think I would use chicken tenders next time instead of chicken breasts, or increase the amount of salsa by maybe another 1/2 jar if I'm using chk. breasts. I think Spanish rice would enhance the dish too. - 2/19/08

This was soooooo good! We will be having this a lot! I had a jar of an avocado salsa, and I used horseradish mustard and since my DH is diabetic, I used brown sugar twin. Had salad, ranch style beans with jalapeƱos and some organic roasted sesame chips to scoop the salsa. It is a keeper! - 4/29/08

Today is our first day in the quest to make healthier eating choices. I was very pleased with this recipe, it was absolutely fantastic! I used picante salsa and served it over greater value southwest style vegetables for a meal right around 400 calories. I will certainly be making this again! - 3/7/11

I loved this recipe. Was a little hesitant at first thinking salsa would be a bit harsh. It was excellent.
I used mild salsa and 2 TBLS brown sugar and 1 TBLS pineapple mustard, it was all I had. My mom thought it was a bit spicy but I thought it was perfect.
