Cajun Catfish baked on top of Fresh Cilantro, Served with Spinach topped with mozzarella cheese

Single catfish portionFresh cilantro (approx a handful)Cajun SeasoningSea SaltItalian SeasoningI can't believe it's not butter sprayFresh Spinach
1. Preheat Oven to 300
2. Put a little water in your baking pan
3. Spray the pan with I can't believe its not butter (IBIB hereonout)
4. break of the Cilantro, saving a small amount, and place it in the center of the pan
5. Rinse catfish and place it on the cilantro
6. use remaining cilantro to lightly spread atop and around the fish
7. Lightly spray fish with IBIB
8. sprinkle sea salt on top of fish
9. dust fish with cajun seasoning
10. in a medium put empty your bag of spinach
11. Place spinach over a low flame
12. Lightly season with sea salt and Italian seasoning
13. let it cook and produce its own water, stir occasionally
14. sprinkle 0.25 cup of mozzarella over completed spinach and cover put with cling wrap.
15. Let spinach stand while the fish continues baking
16. total time for fish: 30-40 minutes at 300, then bump up to 400 for 5-10 minutes to brown to your liking.
17. revisit spinach and notice it is smooth and creamy with the mozzarella now melted.
