Courgette & Lemon Quiche

Ingredients
2 sheets Edmonds Savoury Short Crust Pastry1 Tbl whole grain mustardZest of one lemon100g feta crumbled roughly6 eggs2 courgettes, very thinly sliced
Directions
Preheat the oven to 200C. Line a small sautee pan with baking paper and layer the two sheets of pastry over the base and overhanging the edges. Spread the mustard and lemon zest over the base and sprinkle with the feta. Whisk the eggs roughly and pour into the base. Fold the edges of the pastry over the egg mixture and arrange the courgette slices in the opening. Place the pan over a high heat for 3-5 minutes to start the base cooking then place in the oven for 30 or until cooked and golden.
