Hearty Vegetable Soup

Ingredients
2 32-oz cartons vegetable broth1 bunch baby carrots2-4 large Yukon gold potatoes1 bunch spinach1-1/2 cups leeks, chopped2 cloves garlic, minced1/4 cup finely chopped onion1 cup fresh green beans or cabbage1 bay leaf1/4 tsp oregano (1/2 tsp if fresh)1/4 tsp thyme (1/2 tsp if fresh)salt and pepper to taste
Directions
Dice veggies into uniform pieces. Saute garlic, leeks and onions until soft. In large stockpot, bring broth to a boil, slowly add vegetables (except spinach) and spices and sauteed onion mixture. Return to boil, then reduce heat and simmer until veggies are tender (20-25 minutes). Add spinach and simmer until wilted, another 5 minutes. Adjust seasonings.
