scrimp scampi

l lb. fresh shrimp, shelled and deveined 1/2 to 3/4 cup butter 2 tablespoons lemon juice 1 tablespoon dried parsley flakes 1/4 tsp. salt 1/4 tsp. pepper 4 to 6 cloves garlic, minced Parmesan cheese - optional
In microwave safe dish, 8x8x2 in. square glass baking dish, combine all ingredients except shrimp. Cook at high power 2 to3 minutes, stirring twice till butter is melted. (You could do all this in a pan on top of the stove also, but make sure the garlic doesn't burn)
Saute shrimp in pan w/butter till shrimp is opaque - only takes about 4 or 5 minutes. Do not overcook or shrimp will be tough.
Combine shrimp and sauce and serve over rice or pasta (we like it over linguini), and sprinkle with parmesan if you like.
