Scamble Veggie Egg Tostadas

Ingredients
Egg, fresh, 2 extra large (remove)Onions, raw, .25 cup, chopped (remove)Red Ripe Tomatoes, 1 cup, chopped or sliced (remove)*Canola Oil, 1 tbsp (remove)Jalapeno Peppers, .25 pepper (remove)Corn Tortillas, 2 tortilla, medium (approx 6" dia) (remove)Guacamole - Wholly Guacamole 2 Tbsp, 1 serving (remove)Cheddar Cheese, .25 cup, shredded (remove)Pico de Gallo 2 TBSPCabbage Shredded
Directions
Preheat oven to 500 and place corn tortillas on the rack until they are crisp!

In a frying pan add oil, onions peppers and sautee them and then add tomatoes then add the eggs and scamble them up.

Assemble tostadas, place both tortillas on the plate, spread some cabbage on both tortillas then the egg mixture sprinkle cheese the add pico de gallo or salsa then a dollop of guacamole on each one.

Serve with some black beans in a small half cup bowl :)
