Ingredients
Filling:12 ounces cooked chicken breast, diced1 bell pepper, diced1 cup frozen corn1 cup black beans, drained and rinsed1 1/2 cups diced tomatoes 2 tablespoons diced jalapeno1 teaspoon chili powder1 teaspoon ground cuminCornbread:1/2 cup all-purpose flour 1/2 cup yellow cornmeal1 1/2 teaspoons baking powder1/4 teaspoon salt1/2 teaspoon chili powderpinch cayenne pepper2 tablespoons diced jalapeno1/2 cup frozen corn1/4 cup shredded reduced-fat sharp Cheddar cheese1/4 cup egg substitute1 1/4 cup low-fat buttermilk
Directions
Preheat your oven to 350 degrees. Spray an 8 X 10 inch baking dish with nonstick cooking spray.

Combine all the ingredients for the filling, then pour into the baking dish and set aside.

Prepare the cornbread. Mix together the dry ingredients in a medium bowl, then add the wet ingredients and stir to combine.

Pour the cornbread batter evenly over chicken mixture. Bake 25-30 minutes, until the topping is lightly browned.

Remove from oven and allow to rest at room temperature for 5 minutes before serving.

Serving Size: Makes 6 one-cup servings.

    Definitely will become a regular on my menu. While my family felt it needed more salt... I disagreed. I will probably try Rotel instead of canned diced tomatoes next time. Agree it took longer than 30 minutes for the topping to cook... may use a little less buttermilk next time. - 9/10/13

    Just made this, and will keep in our regular rotation from now on. Only thing I changed was I added a little diced onion and zucchini. Needed more 'heat' as we like it spicy. Increased cooking time slightly so topping was set properly. Very filling, great recipe ;) - 4/7/15

    I made this tonight. It's OK. I baked for 30 minutes but should have left it in longer because it was runny. Maybe it will be better as leftovers. I left out the cumin and jalapenos but next time, I think I'll add a little jalapeno for a *little* bit of kick. - 8/29/13

    This recipe is super delicious from the first to the last byte. I substitutes the cheese for goat cheese and since I do not buy cow milk anymore, I mixed 1/4 of flax milk with 1 T of quark cheese and to 1 T of that in the second mixture.Sooooooooooooooo Good! Will make it often. - 8/21/13

    Good recipe! I like a little more flavor; so, I'll be adding more spice next time. I added a little extra cheese, and used a whole can of beans. Only thing I did differently was cook it longer. I didn't think about tamales being soft until after I baked it to a firm cornbread. :) - 5/5/19
