Ingredients
1 large egg2 large egg whites2 tablespoons shredded Cheddar cheese2 tablespoons diced fully cooked ham1 tablespoon diced green or red bell pepperSea salt and pepper to taste
Directions
1) In a microwave-safe mug coated with nonstick cooking spray, combine all ingredients.
2) Microwave, uncovered, on high for 1 minute; stir. Cook 1-1 ½ minutes longer or until eggs are completely set.
