Pasta with spinach, white beans and tomatoes

Ingredients

1 lb penne pasta1 t olice oil ( or a couple spritz of cooking spray)1-10oz frozen spinach6 cloves garlic, minced1-19oz can white beans2 c diced tomatoes (or one can), drained but keep the juice.2 t dried oreganosalt & pepper to taste
Make 4 servings
Cook pasta according to directions - reserve about a cup of pasta water. Microwave spinach until defrosted. Using a clean dish towel, wring out water (be careful, spinach could be hot). Heat a large saute pan over medium high heat, add olive oil (or coat bottom with cooking spray). Add spinach and cook until fully heated, add garlic and saute for another minute. Add drained tomatoes, saute for another 2 minutes. Add tomato juice (from can), beans, oregano and salt and pepper to taste. Add cooked pasta to pan, toss to combine. Add reserved pasta water, if necessary. Serve, add parmesan if desired.
*I simmer the white beans separately prior to combining with spinach and tomatoes to make them softer, but it's not required.
