Gluten free, nut free, soy free- Banana Bread

Ingredients
Mix together 2 cups mashed bananas (about 2 bananas), add 1.5 cups sugar, 2 tsp vanilla, and 4 eggs.In separate bowl combine 2.5 cups rice flour, 1.5 tsp baking powder, 1 tsp baking soda, .5 tsp salt, .5 cup oil.
Directions
Combine all ingredients into one bowl, mix well.
The temperature and timing on this is highly sensitive, make sure when doing your first try to watch carefully. If bread is not cooked throughly in center I suggest turning heat down in oven and adding more time to bake. This took me a while to perfect but it is worth it because it is so yummy!
