Penne Pasta with Eggplant and Feta

Ingredients
1 box Great Value Whole Wheat Penne Pasta1 large eggplant1 8oz box whole mushrooms2 tbsp extra virgin olive oildried garlic (optional)salt and pepper to taste
Directions
Put the pasta on to cook until tender.
Cut the eggplant and mushrooms to desired shape and size and saute them in 2 tbsp extra virgin olive oil. Add garlic, salt and pepper if desired.
Mix cooked pasta with veggies.
Sprinkle 4oz of feta cheese over pasta and mix.
Serve.
Enjoy.
