Green Chili Chicken Enchiladas

3 Chicken Breast 1 cup of Chicken broth1 small onion1 Tbsp of olive oil1 can of cream of mushroom soup1/2 tsp of Cumin1 tsp of garlic powder1/2 cup of green chilies1 12oz container of green chili sour cream dip8-10 corn tortillas1 cup of grated Mexican blend cheese.Salt & pepper to taste
Preheat oven to 400 degrees
Boil chicken breast until tender and can be pulled apart. When chicken is cool enough to touch pull apart into pieces. Set aside on cup of chicken broth
In olive oil saute onions, and in shredded chicken breast, cumin, garlic, salt and pepper Add cream of mushroom soup and chicken broth. Let simmer for about 5 minutes. Add in green chilies. let simmer for approximately 5 more minutes. Turn off heat and add in sour cream dip.
in a 13x9 casserole dish sprayed with cooking spray, layer tortillas with 8-10 tortillas and top with grated cheese.
Bake in 400 degree oven for about 20 minutes or until cheese turns golden brown.
