Ingredients
1/2 cup raw onions, diced1 large garlic clove, minced2 Tbsp olive oil (no need for Extra Virgin)1 miniature box raisins (.5 oz)1 can garbanzo beans (chickpeas), rinsed and well drained1/2 tsp ground nutmeg1/4 tsp ground clove1/2 tsp ground cinnamon1 cup water1cup dry RiceSelect TriColor couscousjuice of 1 lemon2 Tbsp chopped fresh mint (optional)
Directions
In a medium saucepan, saute oil, onion and garlic until slightly caramelized. Add water, nutmeg, clove, cinnamon, and raisins. Heat to boiling. Add couscous and garbanzo beans. Cover and remove from heat. Let sit for 4 minutes. Fluff with fork. Stir in lemon juice and mint. Serve hot or cold.
