Ingredients
1lb Lentils1 Tbls Olive Oil, Extra Virgin4 cloves Garlic, minced2 bunches green onions, chopped 1 cup Green Peppers, chopped1 cup red peppers, chopped 2.5 Chili powder 1 tsp Cumin 28 oz can tomato sauce or cruched tomatoes2.5 Tbls red wine vinegar
Directions
In a large saucepan, bring 7 cups of water and lentils to a boil. Reduce the heat to medium-low, cover the pan, and simmer the lentils for 25-30 minutes or until the lentils are tender but not mushy. Do not overcook the lentils. Drain the lentils.
While the lentils cook, saute the garlic, onion and pepper in olive oil in a large pot for about 2 minutes or until the vegetables are tender-crisp.
Add the chili powder, cumin, tomatoes and red-wine vinegar and simmer.
When the lentils are cooked and drained, add the lentils to the vegetable mixture. Heat through before serving.
Serving size is 1 cup, serve with brown rice and grilled chicken breast for a healthy high fiber and protein meal.

    Try it with half tsp of ginger-garlic paste instead of plain garlic, and garnish with three tbsps of chopped cilantro...it becomes yummy!!! a blob of butter added in the end enhances the flavour - 12/18/07

    Very good alternative to the usual dips - I served it warm with pita chips and little toast squares.
    Tonight, I added 1/2 a cup to lean ground beef and served it over 1 cup brown rice (serves 1) - very filling and tasty too. Now I have another use for the recipe. - 12/16/07
