Potato and Broccoli Pancakes

Ingredients
1/2 lb potatoes10 oz frozen broccoli1 large egg1/2 tsp salt1 tsp oregano1 tsp garlic3 tbsp flour2 tbsp canola oil
Directions
Cook broccoli in the microwave until tender and process in the food processor.
Peel and shred the potatoes.
Mix all the ingredients minus the oil in a bowl.
In a pan heat the oil.
Form small pancakes out of the batter and fry on both sides until golden brown.
Repeat until all batter is used.
You can use cooking spray instead of oil.

    We had them tonight with meatloaf and carrots. I added an extra 1/4 C flour to make a better consistency for frying pancakes. Maybe that's why I came up with 8 pancakes instead of 6. They are pretty tasty--and green--and would be good to serve on St. Patrick's Day! - 2/17/11

    The flavor was great and quick to make up. I shredded my potato with the food processor & then dumped the cooked broccoli in & processed together. May need to play with flour to get texture right. F.Y.I I got 10 cakes at 50 calories each. All of the nutrients in the recipe are slightly off. - 5/20/12
