Paleo Applesauce Carrot Muffins

Ingredients
2 1/2 cups almond meal/flour3 large eggs (beat well)1/4 cup honey1/2 tsp baking powder1/2 tsp sea salt1 tbsp vanilla extract1/2 cup applesauce (unprocessed)1/2 cup shedded carrots
Directions
Preparation:
Preheat oven to 350 degrees
Mix dry ingredients well. Add in beaten eggs, honey, vanilla, applesauce and shredded carrots.
Mix well until smoothe.
Lightly grease muffin tin with olive oil or coconut oil.
Pour in smooth muffin ingredients.
Bake 35-45 minutes

    These were pretty good. It seemed like they should have more liquid in them, because the directions said to "pour" the batter into the muffin tins. I had to spoon it, as it was more the consistency of cookies than muffins. But it cooked up OK. They are not very sweet, which I like! - 2/2/17
