Hearty Oat Cakes

Ingredients
1 cup whole wheat flour or oat flour (I used whole wheat this time because we were out of oat flour)1 cup rolled oats2 tsp baking powder3/4 cup waterOptional:1/4 cup cranberries, raisins, nuts, or whatever else you would like to add
Directions
Mix dry ingredients in a mixing bowl. Gradually mix in water until batter is thick and pasty. Turn a dry frying pan (no oil or you'll burn them!) onto medium heat. Scoop batter into pan and spread into pancake-sized shapes. Cover pan with lid and let then cook until the bottom is brown and the top is starting to solidify. Flip over and cook for a few more minutes, making sure they are cooked through. Remove from pan and serve warm, or save them for a snack later.
