Whole What Sourdough Pancakes

1/2 C sourdough start1/2 C whole wheat flour1/2 C milk1 egg, beaten1 T oil1 T sugar1/2 t salt1/4 t baking soda
In a non-metal mixing bowl, combine the start, wheat flour, and milk. Cover with a towel and let it sit on the counter overnight.
In a separate bowl combine egg, oil, sugar and salt. Mix well. Add the baking soda, then immediately combine the egg mixture with the sourdough sponge. Mix softly until combined. Let rest for 5 minutes while your pan heats to medium.
Spoon about 1/4 C of the mixture into your heated pan. When bubbles form and the edges start to look dry, flip the pancake over, cook about 1 more minute until bottom side is golden.
Serving Size: Makes 8 4-inch pancakes
