Gluten Free Ham, Spinach and Cheese Crustless Quiche

Ingredients
5 large fresh eggs, beaten1 1/3 cup nonfat milk1/2 cup shredded mozzarella part skim cheese, 5 ounces frozen chopped spinach (1/2 of 10 oz bag)1 medium onion, diced1/2 cup brown rice flour1 Tbsp Arrowroot flour1/2 tsp baking powder3/4 cup diced regular ham (11% fat) (optional)2 shakes Tabasco SauceOptional:1/2 tsp dried mustard1 tsp lemon zest
Directions
Dice and saute onion. Thaw frozen spinach in the microwave. Let vegetables cool. Add 1 Tbsp of Arrowroot flour to 1/2 cup, then fill with rice flour and level. Mix together with baking powder and salt (and dried mustard if you are using) in a small bowl. Combine eggs and milk and beat. Add dry ingredients, cheese, vegetables, ham, Tabasco Sauce (and lemon zest, if you are using).
Bake in a lightly greased 10" pie pan, or muffin cups at 400 degrees until set in the middle (about 40 minutes for pie pan.)
Let set for 5 minutes. Serve with spicy mustard.
