1/2 lb. Boned Chicken Breasts, cut up into pieces2 Tbsp. Butter or margarine12 oz. Polish Sausage (Kielbase), sliced1 Small Green pepper, diced1 Small Onion, diced1 Stalk, Celery, diced1 Can (14.5 oz) Stewed Tomatoes1/2 cup water1 1/2 cups Minute Rice1/2 tsp. salt1/2 tsp. Hot pepper sauce1 Tbsp. chopped parsley (optional)
1. Cook and stir chicken in hot butter in a large skillet until lightly browned.
2. Add sausage, green pepper, onion, and celery; cook until vegetables are just tender. About 5 minutes.
3. Mix tomatoes and water; bring to a full boil.
4. Stir in rice, salt, and hot pepper sauce. Cover and remove from heat. Let stand 5 minutes. Fluff with fork. And sprinkle with parsley.
Serving Size: 6-8 cups
