Heritage Whole Grain Banana Muffins

Ingredients
1-1/2 cups white whole wheat-ultragrain flour2/3 cup packed brown sugar 1 tsp. baking soda 1/2 tsp. ground cinnamon 1/4 tsp. salt 3 Tbsp Egg white/ Egg Beaters1-1/2 cups fat-free milk 1/4 cup natural applesauce3 cups Heritage Heirloom Whole Grain Cereal1 Large banana chopped/ mashed
Directions
MIX flour, sugar, baking soda, cinnamon and salt in large bowl. Blend egg whites/ egg beaters, milk and applesauce together. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and chopped banana. Spoon batter into muffin pan which has been sprayed with cooking spray, filling each cup 2/3 full. BAKE at 400°F for 20 to 25 minutes or until lightly browned. Serve warm
