Slow Cooker Lentil *No Meat* Sauce

Ingredients
2 onions, diced3 carrots, diced2 celery stalks, diced6 cloves garlic, crushed3 bay leaves1 tsp dried (not ground) thyme1/2 tsp each salt & pepper14oz can diced tomatoes, no salt added14oz can spicy tomato sauce, no salt added1 1/2c lentils (green or red)1/2c water
Directions
Fry onions, carrots, celery, garlic, bay leaves, thyme, salt & pepper in a skillet until just softened.

Scrape onion mixture into slow cooker; add diced tomatoes, tomato sauce, lentils and water; stir.

Cover & cook on low for about 5 hours.

Serving Size: makes about 10 cups
