1 can pink salmon1 egg1/3 c. self-rising cornmeal 1/2 c. buttermilk2 T. all-purpose flour1/8 t. garlic salt
Drain Salmon, remove skin and bones and flake. Place salmon in a medium bowl. Stir in other ingredients until blended. Batter will be wet. Drop salmon mixture by spoonful into hot Canola Oil in a large skillet over medium high heat and flatten with fork. Fry 2-3 min. on each side or until browned. Drain on paper towels.
Serving Size: Makes 6 lge cakes or 18 small croquettes
