Amish Baked Oatmeal with Xylitol

2 C uncooked thick cut Oats1/4 C Xylitol or brown sugar1 t vanilla extract1 t. cinnamon1/3 c raisins (I also use frozen blueberries)1 T chopped walnuts1t baking powder2 C non fat milk1/2 C unsweetened applesauce2 T canola oil1 large eggcooking spray
Prepare and refrigerate overnight
Combine first 7 ingredients in a large bowl, and mix.
Combine the 1 1/2 cups of milk, applesauce, oil, and egg.
Add milk mixture to oat mixture; mix well.
Pour into an 8 inch square baking dish coated with cooking spray. (I use a rectangle dish of about the same dimensions)
Add the other 1/2 cup milk in the morning and mix in the morning before baking.
Bake at 375F for 60 min. Serve warm.
