Buffalo Beer Chili with Beans

Ingredients
Sunflower Oil, 1 tbsp Buffalo Meat, 12 oz, cubedOnions, raw, 1 large, choppedGarlic, 3 cloves, mincedTomatoes, 4 large whole (3" dia), chopped, seeded.Green Peppers (bell peppers), 1 cup, chopped Better than Bouillon beef and/or chili flavored base, 3 tsp Chili powder, 5 tbsp Oregano, ground, 1 tbsp Chipotle pepper, ground, 1 tspBeer (IPA) 18 oz Beans Small Red No Salt Eden Organic, 1.75 cup, drained
Directions
Heat oil in large saucepan and brown meat. Remove meat from pot and saute onions & garlic in remaining oil, scraping up fond. (Add a little beer if it is too hard to scrape.)

Add chopped tomatoes, peppers and spices to pot. Stir well. Add cooked bison & beer and bring to a boil.

Reduce to simmer, and cook partially covered until tomatoes have broken down, liquid has reduced, and meat is tender, about an hour. Stir occasionally to avoid sticking.

Add drained beans, stir, and cook until heated through, about 15 minutes.
