Vegetarian Stir Fry

2 cups brown rice1 onion diced1 green pepper diced1/2 pkg frozen brocoli1/2 pkg of frozen mixed veggies1/2 cup frozen shelled edamame1 tbs of Olive Oil1 tbs of Red Wine Vineger1 tbs Soy sauce, low sodium if you have it1 tsp of minced garlic1 tsp ginger
dice pepper and onions and cook in pan with olive oil, until slighlty tender, while this is cooking start your brown rice cooking, once onions and pepper have cooked most of the way add the remaining ingredients, mix well and cook on a low heat so everything has time to incorporate. Once both rice and stir fry mixture has cooked fully you can serve the stir fry mixture over top of the rice.
