1. In large bowl, combine all ingredients. (Beans must be covered in liquid to rehydrate.)
2. Cover bowl and chill at least 2 hours before serving. (You can refrigerate this salsa for up to 5 days.)
This is a great tasting, low fat salsa that is wonderful tossed with a green salad to 'spice' it up a bit. Or, make this an healthy entrée by placing a portion of prepared Black Bean Salsa on a flour tortilla and cover with shredded mozzarella or pepper jack cheese. Top with another tortilla and heat on a skillet till each side is toasted and cheese is melted. The perfect quesadilla!
Or serve with healthy chips. I even eat it alone!
