Super Awesome Healthy Pumpkin Bread

Fresh roasted, mashed pumpkin, eggs, egg whites, applesauce, salt, sugar, baking soda, whole wheat flour
Mix everything together adding the flour gradually as the last ingredient. Pour into whatever baking pans you prefer to use. Bake on 350F for 35-40 mins, depending on your oven. Mine tends to be relatively aggressive so I was pretty good to go by 35 mins, but I also made the mini loafs. Set it at 30, then check it every couple mins with a toothpick. When it comes out clean, you're ready.
This recipe makes two loafs of bread. As you can see in the pictures above, I made all mini loafs instead. I figured about 12 servings in all. Each mini loaf is 2 servings, so one serving is about the size of 2 muffins.
