Ravi's Sweet Potato Hash Browns

* Sweet potato, 6 cup, cubes * Olive Oil, 3 tbsp (optional) * Raisins, .33 cup (not packed) * Almonds, .25 cup, slivered * Banana, fresh, 2 medium (7" to 7-7/8" long) * Cinnamon, ground, 1 tspPam
Chop up the sweet potatoes into a little bigger than hash brown size. Spray a deep skillet with Pam, Saute sweet potatoes with the 3 tablespoons of oil. Cover and cook for 10 minutes. Toss in the cinnamon, raisins and almonds and cover for an additional 10 minutes. Once the potatoes are soft, slice in the bananas, cook for another 2 minutes. This is a filling and delicious food!
