Quick Sun-Dried Tomato Chicken Pasta

Ingredients
Approx. 10 strands angel hair pasta, broken into small pieces, cooked and set aside2 medium baby carrots, sliced1 tbsp chopped onion1 floret cauliflower, chopped3 tbsp sun-dried tomatoes (packed in olive oil)3 oz chicken breast, cooked and chopped
Directions
Cook pasta and set aside.
Place the oil from sun dried tomatoes (approx. 1 tbsp) in small frying pan, add carrot, onion, and cauliflower, and saute' on low heat.
Add chicken and tomatoes.
Stir to mix and continue cooking on low heat about 1 min. Stir in cooked pasta.

    I haven't tried this, but I'm a little sceptical about the "can be prepared in 5 minutes" part. Maybe if you already happen to have cooked pasta, cooked & chopped chicken, and all those chopped vegetables on hand - but I never do! - 9/16/08

    Your calorie count is off because you don't include the oil from the tomatoes. The count should be at least 120 calories higher than it actually is. =( - 9/16/08

    Ladyfidget, about the low carb diet, Atkins has you starting off on less than 20 carbs a day, but you not only count your carbs you avoid certain TYPES of carbs all together. This means you can't spend your 20 carbs on pasta. No pasta is allowed, or fruit. But south beach diet is a little different. - 9/16/08

    I'd like to try this but the cholesterol and carbs are very high and I already suffer from high cholesterol. From previously being on a low carb diet, I was told that you should stay under 30 gr of carbs a day in order to lose weight.Is this a myth? I also thought the 10 strands of angel hair weird. - 10/28/07

    I assume the extremely silly 10 strands of pasta is a mistake. Nice & simple, but I will use considerably more strands of whole grain pasta. - 10/27/07
