Mushroom & Spinach Omelette

Ingredients
2 med mushrooms, I used Baby Bella, sliced thin1/3 c baby spinach1 egg3 egg whites or 1/4 cup cartoned egg whitesPamsalt & pepper
Directions
- Heat omelette pan or small skillet over med heat
- Spray a little Pam
- Cook mushrooms until they start to brown, about 2 minutes
- Add spinach and stir until wilted, about 1 minute
- Add egg and egg whites, break yolk
- Cook until egg is just set, then flip over and cook another minute.

Done
