Nuevo Huevos Rancheros

Ingredients
1/2 Mission Carb Balance tortilla (burrito size)1 egg3 egg whites or 1/4 cup cartoned egg whites1 tbsp finely shredded cheddar1/8 c black beans, heated1 tbsp chunky salsa
Directions
1. Heat tortilla half -- I use the burner on my gas stove -- then put it on your plate
2. Spread beans on top of tortilla
3. Salsa on top of beans
4. Cheese on top of salsa
5. Heat a skillet and spray with Pam. Cook egg + egg whites until firm. Or you could scramble them.
6. Eggs on top of everything.


Serving Size: Makes 1 decent-sized plate of food
