Sausage and Kale Soup -- Paleo/ LC

Ingredients
4 fully cooked pork sausages, italian or brat style6 oz. baby bella mushrooms, sliced2 cups kale, chopped1/2 cup onion, chopped1 tbsp. olive oil or butter1 quart chicken broth2 tsp. minced garlic1 tsp. dried oregano1/2 tsp. paprika
Directions
Melt the butter in a pot over medium heat. Add the onion, mushrooms, and garlic. Saute until soft and golden, roughly 6-8 minutes.

Add the sausage and turn to brown evenly. Sprinkle in the oregano and paprika.

Pour in the chicken broth and simmer for 10 minutes. Add the kale and cook until it's completely wilted, which will take just 2-5 minutes.

Salt and pepper to taste before serving alongside your favorite grain-free, Paleo rolls.
