4 oz fresh razor clams1 stalk celery, diced fined4 medium potatoes, diced1/2 lb bacon, chopped6 cups half and half2 cups milkChicken Base2 tsp Salt1 tsp pepper2 tsp Celery salt 2 tsp garlic powder 2 tsp onion powder Dried parsley to taste, start with 1 tsp1 tsp cayenne4 tbsp unsalted butter4 tbsp flour
In a large sauce pan saute celery, potato, and bacon.
Toss in the seasonings, stir, and continue to saute until soft. Pour in half & half and milk. Add chicken base.
Toss in the clams.
Make roux adding 1 tbsp flour at a time until desired consistency is reached. Add a little bit to the chowder and whisk to thicken.
Serving Size: makes 8 bowls
