Carrot Cake Muffins

Ingredients
8 egg whites, beaten to soft peaks1 cup oat flour1/2 cup cottage cheese, blenderized smooth4 scoops vanilla protein powder2 teaspoons baking powder2 tablespoons vanilla extract1/2 cup splenda granular3 teaspoons cinnamon1 1/3 cup finely grated carrots
Directions
Preheat oven to 375 degrees. Combine egg whites and all ingredients except carrots. Gently fold in carrots. Spoon batter into muffin cups prepared with nonstick cooking spray. Bake for 30 minutes or until golden brown.
