Ingredients
Black-eyed peasGimme Lean or other vegetarian sausageDiced tomatoesOnionsgarlicLong grain brown ricevegetable broth
Directions
Chop the onions and garlic and dice the celery and sautee all three together in a pan coated with cooking spray or broth sautee until soft (about 5 minutes). Add the thyme and sautee on more minute in order to release the flavor.

Add the onion mixture, tomatoes, black-eyed peas and broth to your slow cooker, mix well and turn on low.

At any time prior to the last 15 minutes of your cooking cycle, brown the Gimme lean and prepare the rice according to instructions.

In the last 15 minutes of slow cooker activity add the cooked rice and browned Gimme Lean.
