Chicken and Veggie Fajita Bowl for One!

1 can 98% Fat Free Chicken (4.5 oz) - rinsed!1 bell pepper (or 10 strips of various color if you like variety)1/4 onion (cut into strips)1/4 cup pinto beans1 tsp minced garlic1 tsp cumin3 tbs cranberry salsa1 tsp extra virgin olive oil (EVOO)Cooking spray
Spray pan with cooking spray. Add EVOO and garlic. Heat pan. Add veggies. Heat for 2-3 minutes. Add chicken, seasonings and salsa. Heat until veggies become somewhat transparent. Add beans. Heat through. Serve!
Want a little variety? Add 1/2 cup Pineapple Black Bean Salsa (recipe here: https://recipes.sparkpeople.com/recipe-detail.asp?recipe=11795). I like to sautee that in with the beans so that it gets heated nice, but it can be added cold on top too!
