Gascon Vegetable Soup

Butter, salted, 1 tbsp Leeks, 3 leek white only, thinly slicedTurnips, 1 medium peeled & finely choppedCarrots, raw, 1 medium peeled & slicedCelery, raw, 1 stalk, medium (7-1/2" - 8" long)thinly sliced, greens reserved Garlic, 4 cloves crushed & choppedCabbage, fresh, 3 cup, choppedBeans, white, 15oz can*Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)peeled & cubed Bay Leaf,2Salt, 1 tspThyme, dried, 3/4 tsp Pepper, black, .5 tsp Sage, ground, 1 tspHam, regular (11% fat), 1.5 cup, diced(8oz) Chicken Broth, 8 cup (8 fl oz)
In a large saucepan over med-high heat, saute the leeks, turnips, carrots, celery, & garlic in the butter until tender(12-15 min),
Stir in the cabbage & saute it for 2 min.
Add the remaining ingredients & bring to a simmer.
Allow the soup to gently sinner, uncovered for 20 min, until the potatoes & cabbage are tender.
Remove the bay leaves & serve.
Serving Size: 8-10 servings
